Chinese martial arts developed strategies for getting and keeping the hands on top; this included switching and flipping the sabers to "cover" the opposing limbs and weapons. You would think you wouldn't be able to move the sabers like this without getting tangled, but this is the best method they could devise in case the sabers needed to switch.
